Happy Chocolate Day! Special Authentic French Chocolate Truffles

Celebrate your Chocolate Day with these delectable Chocolate Truffles from a large gathering to a small family dinner. These truffles are way better than whatever the Easter bunny put in your basket.

Best Chocolate Truffles Recipe: 

Ingredients

140 g (5 oz) Chocolate (Dark and Milk chocolate mixed up to your taste)

50 g (1.7 oz) Salted butter (I recommend the President brand as it is far creamer than any other butter)

2 egg yokes (Large Brown Organic Eggs)

1 tsp Vanilla aroma or Vanilla grain sugar (Optional)

4-5 Drops orange water blossom (Optional)

4-5 Drops Rose Water (Optional)

For Garnishing Unsweetened Chocolate, Nuts, toasted coconut, pretzels, powdered sugar, cinnamon, sea salt, orange zest. (Ingredients of your choice)

Preparation

Temper the chocolate in a “Bain Marie” (double boiler)

Tip: You may use a deep pan to heat the water, put the chocolate in heat proof bowl and immerse in the pan until the chocolate is melted.

Cut your butter into small dices

Once your chocolate is melted, take the chocolate out of the boiler and slowly add butter to the chocolate.

Tip: Adding the butter slowly while stirring it will keep the chocolate shiny. 

Optional: Add some flavors to your mix – half of a Vanilla grain sugar sachet is enough. You could also add rose water, orange blossom water, cinnamon but very very little. Nothing should cover the taste and smell of your chocolate.

Add the two yokes, one after the other, and continue to stir at a slightly faster pace so the eggs don’t cook

Tip: Separate both the yolks first and add little at a time while stirring quickly

Once you get a smooth mix, start to add your powdered sugar. Spoon after spoon continue to stir very slowly. You should get a thicker and a little grainy paste

Tip: You may add more sugar if you don’t get the desired consistency

Put in the fridge for at least 45 minutes

Roll the paste into small round balls with your palms and roll and cover them with toppings of your choice: coconut, pistachio, almond, chocolate, walnuts, orange, grapefruit or lemon zests.
